Nitrous oxide

Group: Other

Harm level1 of 5No concern

In plain words

Nitrous oxide is a gas used mainly in whipped-cream canisters. It makes the cream fluffy as it is sprayed out of the can.

Where you find it: aerosol whipped cream

Our recommendation

No need to avoid in food; never inhale gas from canisters.

Possible risks and effects

  • No relevant risk known in food.
  • Recreational inhalation can cause B12 deficiency and nerve damage.

For experts

Nitrous oxide (N₂O) is authorised in food as a propellant, mainly for aerosol whipped cream. It dissolves well in fat, so it expands the cream when pressure is released. The amounts remaining in food pose no risk; the problem is solely recreational inhalation, which inactivates vitamin B12.
