Polysorbate 80

Group: Emulsifiers · in the book

Harm level3 of 5In moderation

In plain words

Polysorbate 80 is a synthetic emulsifier that binds fat and water so they do not separate. You mainly find it in ice cream, frozen desserts, sauces and some supplements.

Where you find it: ice cream, sauces, spray cream

Our recommendation

Limit it; with inflammatory bowel disease, it is worth avoiding.

Possible risks and effects

  • Possible disruption of the gut mucus layer and microbiome (evidence mainly from mice)
  • People with IBD or metabolic problems may be more sensitive

For experts

A polyoxyethylene sorbitan ester of oleic acid; a non-ionic surfactant emulsifier. EFSA's 2015 re-evaluation of polysorbates E432–E436 set a group ADI of 25 mg/kg bw/day. Mucus-layer disruption, microbiome shifts and low-grade inflammation have been seen mainly in mice and in-vitro models; human data are still limited.
