Our recommendation
We recommend limiting it; people with gout or high uric acid should avoid it.
Possible risks and effects
Contains purines that turn into uric acid – unsuitable with gout and high uric acid.
Usually combined with MSG, boosting the overall umami effect.
May be of animal origin (e.g. fish), relevant for vegans.
For experts
A mixture of the sodium salts of guanosine and inosine monophosphate (E627 and E631), obtained from yeast, by fermentation or from animal sources. It acts strongly in synergy with glutamate, so very small amounts suffice; it is not considered toxic at normal use, the main limitation being its purine content.
