For experts

Sorbic acid is an unsaturated fatty acid (2,4-hexadienoic acid) metabolised in the body much like other fatty acids. It works best in acidic conditions, mainly against moulds and yeasts. In 2019 EFSA set a group ADI of 11 mg/kg body weight per day for sorbic acid and potassium sorbate.
